I'm thinking of buying a v64 jr 512 but I'm confused about how the saving works. Do I need to buy both a ds1 and a dx256 (or whatever there called) to save some games or is there a way to back up the saves to a memory card or to the PC then upload them again when I want to play that game?
Any help to do with the saving process will be greatly appreciated

No, you don't, you can save onto a cart that has the right kind of save chip.

I believe as a test someone from a previous thread actually tried saving Pokemon Stadium using Pokemon Stadium as the boot cart.
It failed. So this is not always true, although generally for SRAM and standard EEPROM games it is.
Standard EEPROM games can also be backed up to MEMPak using SRAM manager. Saves take up 2 pages.
