Anyone know if you can use a Zelda64 cart as the boot cartridge in a v64 Jr. and use the memory in it to save other games, instead of getting the DS1?

You absolutely can. The V64 is different from the V64jr and the V64jr is perfectly capable of saving to an unmodified SRAM cartridge.
Sorry Handy... So early in the game you may have just jumped to that conclusion.

That is.... assuming the game he wants to play has a 6105 cic... or he uses the latest greatest bootemu every time... otherwise, the correct answer would be no.

This also assumes that he isn't playing another 6105 game ;) Well, there are no other 6105/SRAM titles BUT there are MODIFIED 6105/SRAM titles. ie, patched Zelda: Majora's Mask. However, I think my example is irellevant because it requires a DS1 (I remember hearing about randomly loosing saves on a genuine SRAM host cart or something)
I, myself, use the UBE with the modified headers to run on all CIC chips. :)

Also, it can mix and match CICs with SRAM using a PCD. WCW vs nWo Revenge is a decent 6102 SRAM host card.
